good intentions

Another gorgeous day here in central North Carolina. This weekend is supposed to remain pretty nice, except for a few isolated thunderstorms, but I can deal with that.

When Mike and I got home yesterday, we immediately grabbed Franklin and headed out for a 4 mile run. Neither of us were feeling very great about it for the first 2 miles, but the last 2 weren't so bad. I really think our neighborhood is a pretty hard route. The hills that you have to go up are not small, or short. So you are exhausting a lot of energy within the first mile of running. I guess it is a good training route, but when you want a nice easy run, it is nearly impossible.



We finished it, and didn't stop to walk at all, so I guess that is all that matters. Everyone was quite tired by the time we got back to the house.


Deluca gets pretty upset when we leave him at home, so we always try to take him out on the leash for a quick few when we get back. It is a nice cool down for us, and Deluca gets to feel special for a brief moment. He is just so awful to walk on a leash.


Mike says he measured this route in his car and on another app, to make sure it was 4 miles, but my Nike app didn't give us that much. I am not sure what is more accurate, but it doesn't really matter.


Mike had some schoolwork to do when we finished, so I started on dinner. We both wanted to eat some veggies last night, so I made up a fresh stir fry. For some reason, I forgot to get any pictures of the end result, so you are stuck with only an "in process" picture and a leftover lunch picture.

This stir fry was pretty good. It had a fresh and light taste, with some spicy and sweet flavors. I didn't want to do a soy sauce drenched meal, even though that is what would have tasted the best, so I tried to add some other flavors that would go well with this dish.


Sweet and Spicy Coconut Veggie Stir Fry
serves 4
2 roma tomatoes, diced
1/2 diced orange bell pepper
1/2 diced red bell pepper
1/4 head of chopped purple cabbage
1/2 cup chopped yellow onion
1/2 cup broccoli (we had frozen on hand, but fresh would also work well)
1 tsp chopped garlic
1.5 cups cooked quinoa
1 tbsp soy sauce light
2 tsp coconut oil
2 tsp honey
1/4 tsp ground cayenne pepper
1/4 tsp crushed red pepper
1/2 tsp ground ginger
1/4 tsp sea salt (or to taste)
2 eggs, scrambled

I had some already cooked quinoa in the fridge, so if you don't, make that first. I added the coconut oil to a large wok and then added all the veggies except for the tomatoes. Allow to saute for 10-15 minutes, or until they have reached your desired tenderness. Next, add in the garlic, soy sauce, honey, and spices. In a separate pan, cook the scrambled eggs. Add the quinoa to the wok until warm. Lastly, add in the scrambled eggs.



Only 345 calories and 227g of sodium per serving and 14g of protein. Pretty good dinner in my opinion.

Mike wrapped his in a tortilla (like he does with everything, lol) and added some hot sauce, but I liked it plain. I brought a tortilla with me today for my lunch, so we will see if I want to use it or not. 

We had every intention of waking up today at 6:30, going for a run in our neighborhood, and then I could go to the gym while Mike went to work. We thought that would be the solution to my running outside and going to the gym problem. Well, that didn't exactly happen. The alarm went off at 6:30 and it was dark outside, so we hit snooze. At 6:45, it was still dark outside, snooze again. By 7, we wouldn't have had enough time for a run and for Mike to get ready at home, so we had to head out the door without a run. I guess since we had ran less than 12 hours prior, it was probably better that we didn't. Mike brought his things so he could attempt a run at lunch time, but I just went to the gym for some weight training.

I worked my chest today and my arms are still feeling like jello. I did flat, incline, and decline presses along with assisted dips. I should have swapped today's workout for tomorrow's, since I didn't get any cardio in today. I had planned to do cardio and chest today, legs tomorrow. Now, I will either go 2 days without cardio, or will have to do legs and cardio in the same day, which I normally have trouble with. Since Mike and I are driving separately tomorrow, I am going to try to go to a local lake or trail to run, and then go to the gym for legs. I guess we will see if that happens, but it is always good to have a plan!
